Do I actually need a kitchen scale?
Yes, if hydration matters to you at all. Baker's percentages and starter feeding ratios are weight-based; scooped cup measurements of flour can vary by 15% or more, which is enough to turn a 70% hydration dough into something closer to 60% or 80% without you realizing it.
Is the float test reliable?
